Context
On the last Friday of January, nineteen people from different worlds - diplomats, artists, entrepreneurs - gathered at Anna's Bistro on Oborishte 23 for a working lunch to discuss black caviar production in Bulgaria and our country's role in saving the sturgeon in the Danube.
Only 50 years ago a fisherman on the Danube could catch a moray eel weighing as much as a child. Today children do not know the word “moruna”. The barbel and the Atlantic sturgeon are considered extinct species. The others are on the brink.
The team of AEmillius Caviar and the Association of Black Caviar Traders in Bulgaria abctb.eu develop a joint project with a clear goal: pleasure must support the work.
Menu and message
“I want the black caviar to tell about the future,” said Chef Martin Alexandrov.
Chef Martin Alexandrov created six dishes in which the black caviar was not a decoration, but a message. Each bite told a story of rivers, time and responsibility.
