On 18 July, we celebrated World Black Caviar Day – a celebration of one of the most prized delicacies and of the culture behind its production, presentation and sharing.
For us at AEmillius Caviar, this day was an opportunity not only to bring together lovers of black caviar in one place, but also to draw attention to Bulgaria’s increasingly significant position in the global market.
In 2026, World Black Caviar Day took place against a backdrop of significant growth in demand. Bulgarian produce is finding its way into some of the most prestigious shops, hotels and restaurants around the world, particularly in France and the United States. Our country is establishing itself as a leading European producer, successfully competing with the traditional leaders in the sector.
Why is demand for black caviar on the rise?
Global stocks are declining, stocks at some sturgeon farms are being depleted rapidly, and Bulgarian black caviar stands out for its high quality, reliable provenance and competitive flavour profile.
The Association of Black Caviar Traders in Bulgaria has reported a significant increase in demand this year. The main factor is a global shortage of supplies, with stocks at some farms having been exhausted just two months after the end of the production season.
DarikNews quotes the association’s chairman, Emil Arabadzhiev:
„The reason is a shortage of stock at sturgeon farms around the world.“
The production of black caviar cannot be increased in the short term. Farming sturgeon is a long-term process that requires significant investment, specialist knowledge, suitable conditions and years of constant care.
When supplies on the international market dwindle, countries with well-established agricultural sectors and a proven track record of quality have the opportunity to reach more customers. It is precisely in this environment that Bulgarian producers demonstrate their strengths.
What is Bulgaria’s position in the global market?
Bulgarian black caviar is available in some of the most expensive and prestigious shops, hotels and restaurants around the world. Among the most important international markets are France and the United States – countries with a long-standing tradition of consuming luxury foods.
This presence is not based solely on production volumes. For luxury products, the origin, consistency in quality, size and durability of the pearls, the balance of salinity and the overall taste experience are of key importance.

What makes Bulgarian black caviar so special?
One of Bulgaria’s greatest strengths is its ability to offer three of the most prized varieties of black caviar:
from Siberian sturgeon;
Russian sturgeon;
from the moruna, also known as beluga.
These varieties differ in the size and colour of the pearls, their texture, aroma, salinity and aftertaste. This variety allows restaurateurs, chefs and private connoisseurs to choose the right product to suit a particular dish, drink or occasion.

How does Bulgarian caviar compete with Chinese caviar?
China has a huge domestic market, significant production capacity and lower production costs. Sturgeon species not typically found in Bulgaria are also farmed in the country, and private enterprise in the sector receives substantial financial support.
Initially, Chinese caviar may be offered at a lower price. However, once it reaches Europe, transport, logistics and other associated costs significantly narrow this gap. In some cases, its final price is almost on a par with that of European products.
When the price difference is small, quality and origin become even more important. This enables Bulgarian caviar to compete not through mass production, but through its distinctive characteristics, traceability and established reputation.
How big is the global market for black caviar?
The global market for black caviar is estimated to be worth more than 600 million euros in 2025. According to published forecasts, its value could exceed 1 billion euros by 2035.
These expectations suggest that interest in this delicacy will continue to grow. However, the market’s development requires substantial, long-term investment.
A sturgeon farm requires a suitable aquatic environment, specialised feed, constant veterinary and technical monitoring, and takes years to reach full production capacity. Despite these conditions, interest in the business remains high.
Bulgaria’s prospects lie not simply in increasing production volumes. It is more important to maintain high quality, expand its presence in new markets and build long-term relationships with restaurants, hotels, specialist retailers and connoisseurs.
Is black caviar available to Bulgarian consumers?
Although it is a luxury product, black caviar can be affordable for Bulgarian consumers, particularly when chosen for a special celebration or an important personal occasion.
A carefully curated selection, the right temperature, the right spoon and the perfect pairing with a drink can turn a dinner into a true ritual.

Why is it so important to protect sturgeon?
The development of black caviar production is inextricably linked to the conservation of wild sturgeon species.
The Bulgarian sector is working to restore sturgeon populations in the River Danube through restocking, combating illegal fishing and international cooperation. Discussions are underway with the Republic of Serbia to find solutions relating to fish migration and the „Iron Gates“ hydroelectric complex.

Since 1 January 2026, an indefinite ban on the catching of wild sturgeon in the Danube and the Black Sea has been in force in the country. The measure forms part of efforts to protect the remaining wild populations.
What is the role of consumers?
Every consumer can support the sustainable development of the sector by choosing only certified black caviar with a clearly stated origin.
Products without labels, the necessary markings and traceability may be linked to illegal fishing and unregulated trade. Origin is therefore not a mere formality, but a guarantee of legal production and responsible consumption.

On 18 July, they turned World Black Caviar Day into a real party and a complete experience.
It’s hard to explain and capture the joy, the laughter and the taste of luxury – thank goodness we have the photos.
We brought together people from different professions, with different life stories, but who share a common love – black caviar.
For us, this was proof that caviar is much more than just a product in a beautiful box. It is an occasion for getting together, conversation and a shared experience. Quality and provenance set the scene, but the real story comes to life when the right people gather round the table.
